The Bonnington in Leith has officially opened under new ownership.
Carlo Carrozzi, known for his successful award-winning street food venture – ‘The Peruvian’, located at ‘Edinburgh Street Food’, has refurbished the pub as a cocktail bar serving small and sharing plates as well as retaining its local feel.
Carrozzi applies his expertise and enthusiasm for hospitality to The Bonnington, leveraging his experience from some of Edinburgh's most renowned venues, such as The Voodoo Rooms, Dragonfly, and his award-winning street food enterprise, The Peruvian, which is a notable part of Edinburgh's street food scene and is acclaimed for its distinctive culinary style.
Carlo commented on the new opening:
“I have always had the ambition to open a cocktail bar and when this location came up, I couldn’t turn it down. It is the perfect space, so versatile and it is a well-known institution in Edinburgh, which I plan to continue its tradition as a great local. I’m looking forward to bringing some of my Peruvian flair to The Bonnington and I can’t wait to welcome everyone as we re-open the doors.”
The new cocktail menu will feature drinks such as the classic Pisco Sour and Peruvian-style mulled wine and Inca Cola, the Peruvian version of Irn Bru and the only place in the capital serving this soft drink.
The food menu features dishes including crispy monkfish cheeks, coronation fried cauliflower, roast Hokkaido squash, and Findlay’s of Portobello bacon chop. The menu is designed to bring a fresh and exciting dining experience to The Bonnington’s guests.
