I sat fascinated in Miller and Carter recently. This 158 cover steakhouse at Cramond Brig was heaving with customers and had been since opening a couple of weeks earlier. What was the secret of its success?

Fast forward to the end of our meal and I had it in a nutshell. Nothing new or fancy mind, Miller Carter is quite simply giving customers what they want.  Good quality beef, an attractive restaurant, friendly professional service and transparent pricing are just some of the boxes being firmly ticked.

Plenty of juicy prawns, fresh lettuce and sweet red peppers peppered my prawn cocktail (£5.95) and Mr Bite's baked Cheddary mushrooms (£4.95) were moreish enough but it was the steaks that really punched above their weight.  

I had the 8oz fillet with Béarnaise sauce and blue cheese butter (£22.95) whilst Mr Bite opted for the fillet Wellington (£19.95).  Sauces and butters are selected from the menu and all steaks are served with Miller Carter's signature side, lettuce wedges with, in my case, blue cheese sauce. Well- seasoned, well-cooked fries and all the trimmings are included. The beef was exquisitely juicy and succulent; it is all sourced from farms in Renfrewshire and aged for 28 days.  The pastry on the Wellington was golden and old school and the onions had been fried and then baked boulangère style.

I noted things for a future visit; fish n chips a very reasonable £9.95, homemade Scotch burger £10.50, cocktails, champagne, lots of lovely wine.

Our very friendly waiter 'Keith' recommended the chocolate brownie for dessert and we were glad we had some room left (not much) for this delightfully gooey, moist, full of dark chocolate pudding.

We concluded that we could bring a lot of different people to Miller Carter and everyone would leave happy, family, friends, workmates, or children. It's an unpretentious restaurant serving food that would demand a far higher price tag a few miles away in the city centre.
