This single origin raw chocolate is made with Criollo beans from Peru at Manor  Loan in Stirling making this company Scotland's first bean to bar chocolate maker. The beans are only lightly fermented, unroasted, and gently stoneground for 3 days using artisanal methods with the added condition of low temperature processing. This ensures the nutrients and polyphenols are carried through undamaged from the bean to the bar. The chocolate is subtly sweetened with low GI coconut palm sugar.  www.iqingredients.com
