Cannae go wrong

As the wonderful tour of whisky continues I would like to introduce you to Balvenie, a Speyside whisky from Dufftown.

Now most of you may have at one time or another tasted Balvenie in some shape or
form and you have probably also tasted Glenfiddich on one or two occasions. How
two distilleries can be built on the same land, use the same water source, and use the
same barley, yet produce completely different whiskies, no one will ever know.

Built in 1898, it still has one the few remaining floor maltings and kilns that produce
slightly less than 10% of the malted barley that is required for distillation.

Balvenie is also one of the few distilleries that has never been sold off and is still
owned by William Grant and Sons.

The nine stills are from the Lagavulin and Glen Albyn distilleries and their malt is
only lighted peated. All the water comes from the Robbie Dhu Springs in the Conval
Hills behind the distillery. Casks range from ex-port, ex-sherry and ex- bourbon.

My favourite of the range is the Balvenie 12 year old Double Wood but with that said
I don't really feel you can go wrong with any Balvenie.

The Review:
Balvenie 12 year old Double Wood - Speyside- 40% abv.

The Double Wood is as it sounds. First matured in ex-bourbon casks and then in first
fill ex-sherry casks. All this maturation in casks lends itself to a sherried spice and
intensely honeyed nose almost a little fruitcake. On the palate is honey, honey, honey!
The finish, you guessed it! Honey!
