This rooftop Champagne lounge doubles as 7th-floor reception, welcoming visitors to the new Market Street Hotel (facing the rear entrance of Waverley Station) with commanding city views. The hotel is an individual member of the Dutch Carlton chain and has also been selected as the first Scottish member of Design Hotels, illustrating its impact on the senses.

You can enjoy the experience in many forms, from a bargain bubbly breakfast (£18 from 6.30 am), via daylong small plates, to toasting the moon framed by flaming pyramid patio heaters after watching the sunset. The house Champagne pour is Justerini & Brooks’ 250th Anniversary cuvée, rich in savour, at a market-beating £8.50 per glass. With over 20 Champagnes to select from, half are available by the glass, alongside a broad range of unique cocktails including some signature serves named after prominent ‘local heroes'.

The canapés we enjoyed were beautifully served, oh-so-fine yet super-tasty. Duck parfait with kumquat gel on the lightest leaf of crispy bric pastry; juicy monkfish wrapped in Serrano ham with basil gel, and Pernod-braised mushroom crostini with tarragon & thyme gives you a flavour. There’s a small but shareable plate of these and many other unique bites - which you can watch being assembled at the rear open pass - at a reasonable £6 per plate.

Attention to detail is evident not only in food & drink. Focal flame fires are set at different eye heights so the whole room can enjoy them. Tartan/thistly touches have been added but in a light, contemporary style - their ‘Brutal Beauty' ethos covering from cracked stone to its counterpoint of bright, comfortable seating. 28 different tartans were commissioned, but all are used very subtly, e.g. flashes of tartan on smart grey staff uniforms.

This place would make an impressive recommendation for visiting colleagues or friends, whom you could join there to socialise or for meetings. Rooms have been carefully designed so that each manages to snag a little bit of view even if it's not the main rooftop panorama - or indeed the 6th-floor suite we saw that was being used for the launch, with its bathtub full of iced Laurent Perrier rosé! Guests have every detail attended to including what is here dubbed the ‘Indulgence Cabinet(!)' with wine, beer & treats included, and a ‘full artillery' grooming drawer including state-of-the-art Dyson Supersonic hairdryer.
