Can you recommend  three wines for Autumn
Champagne Leclerc Briant, Brut Reserve NV, bbr.com;
La Garance III Grenache 2017, Villeneuve Wines, Edinburgh;
Grattamacco, Bolgheri Rosso, 2017, bbr.com. 

What Edinburgh restaurants have interesting wine lists?
Timberyard. Joe Radford has orchestrated a natural-focused list, which wouldn’t be out of place in ANY of the world’s best restaurants.

What glassware do you recommend?
IKEA’s ‘one-glass-fits- all’ is my current ‘go-to’; I do have a couple of Riedel Tulips designed explicitly for fine Champagne.

Flute or Coupe?
Neither. Chuck the flutes out and keep the coupe for cocktails. Go buy a Tulip.

What will be the next ‘big thing’?
English Sparkling; many of the top names like Hambledon Vineyards are already beating the best French fizzers in blind tastings. I'm still hoping for a Lambrusco revolution; I love Lambrusco.

What should we be asking our sommelier?
Tell him what you want to spend, what you are eating, and what styles you like drinking. Then ask them to pick two wines for you; a wine stylistically similar to something you already know and something; totally new. Then the decision is yours.

What wine would you recommend for a romantic dinner-a-deux?
Often bubbles are the only option - nothing says romance like pink champagne.  

Where would you drink it?
Up Arthur’s Seat at sunset.

Best food and wine pairing?
Decent champagne and a proper fish supper.

What does ‘corked’ mean?
The real meaning is Trichloroanisole or TCA. It is a bacterial infection from the winery or cork. Symptoms usually manifest in an old wardrobe/ wet cardboard smell/flavour or with a palate stripped of fruit.

Any wine-food faux pas?
Dry old Claret with cheese. It's a British tradition, but it makes both cheese and wine taste terrible. I usually stick to white or sweet wine with cheese.
