Who are you and what do you do?
I am a chef, restaurateur and dad and I run two great restaurants. I also spend a lot of my spare time working in the garden and devote a fair bit of time (again) to food
education in general.
 
What would you cook for a romantic dinner a deux?
Two dozen oysters, then a dozen langoustines and a dozen scallops.

Who would be your ideal date and why?
La mere Brazier. We could talk food for hours, understanding each other – she was a charming lady.

What would you drink?
Champagne.  

What is the most romantic meal you have ever eaten? Where was it and why was it so romantic?
Fresh king crab in Ushuiaia with my partner Betty – it was because of who and where it was.

What is your idea of an aphrodisiac food?
Fresh oysters.

What would be your ideal soundtrack for a romantic meal?
Marvin Gaye and Barry White.

What is your favourite food/drink related song/piece of music and why?
French musette accordion music always reminds me of classic French dishes.

What is your favorite restaurant in Edinburgh and why!
The Kitchin. They deliver above expectation every time.

And elsewhere?
L'escargot Bleu and Blanc of course!

What is your fave bar and why?
Le bar musette des puces de ‘St Ouen Paris’.

Who would you most like to go out drinking with and why?
My friends because they are close to my heart.

Any embarrassing food faux pas?
When a group of 20 people walked in for a wedding reservation that l’escargot bleu had missed.

What would you pack for a picnic?
A freshly roasted chicken, a bottle of nice Beaujolais, bread, butter and freshly made mayonnaise.

What would order for your last meal?
A stone of freshly cooked langoustines, bread and butter, mayonnaise and a bottle or two of champagne.
