Autumn seems exactly the right time to launch this smart Deli and Salad Bar in the West End. The last of the allotment produce is being harvested (owners Cat and Mark tend their own plot), cooked, prepped and transported to the Roots salad bar which displayed a colourful selection of beets, tomatoes, runner beans, squash, legumes, leaves, and grains on the day I visited.
Owner Cat describes Roots as 80% veggie although carnivores can enjoy charcuterie and doggies will love treats such as dried Serrano ham. Roots is child and doggie friendly with a bowl of water outside being a nice touch.
Cat and her team embrace an ethos of sustainability which extends beyond the food. She tells me that when interviewing applicants to work in Roots she asked searching questions such as what would you do if you won the lottery and what advice would you give to your last boss. This resulted in a like-minded team of folk who care about the planet, its resources and the culture at Roots which aims to be caring and inclusive.
Roots is striving for 100% zero waste. All packaging is from vegware and compostable and my Fresh Start smoothie (watermelon, melon, strawberry, apple, lemon) came with a bamboo straw. If you return your salad container you get your next salad box for £1 less.

Hot dishes leek and tattie soup (Scotland's favourite) and mushroom and vegetable bourguignon were on the menu. House coffee is Redbrick (milk chocolate, cocoa, citrus flavours) from Square Mile roasters and I bought some Juanachute beans (raisin, plum, chocolate) to take home. Bite-sized chocolate cakes and truffles are the perfect accompaniment.
I also took away a salad box, some Applewood Cheddar and Manchego cheese. My box contained Breadshare bread with a mushroom tapenade and really delicious stuffed vines leaves. Teeny  potatoes had that freshly dug flavour, beets with quinoa were fruity and earthy, runner beans combined with adzukis was inspirational and squash was flavoured with preserved lemons. You don't get more seasonal.

Roots is a great wee deli and a good pit stop for grabbing breakfast (granola, fruit and yogurt in a jar), lunch or ‘on the way home essentials’ like milk, cheese and oatcakes and a healthy salad for supper! (S. Wilson)
