Hopetoun House, near South Queensferry has been selected out of hundreds of locations as the venue for a new BBC cookery series staring master baker Paul Hollywood.

Famed for food sustainability and provenance, Hopetoun Farm Shop was selected for a filming session to form part of the Pies and Puds programme launching on the BBC in November. With a commitment to quality home reared produce Paul choose to focus on the Hopetoun game - concocting the Hopetoun Raised Game Pie, a mixture of rabbit, partridge and pheasant in a water crust pastry.

The filming will form part of a 45-minute programme with star appearances from Farm Shop staff who got involved in the cooking and tasting.

Hopetoun Farm Shop master butcher Derek Mackintosh led the visit providing information on the various different types of meat available at the Shop as well as assistance on the cooking of the game meat and discussion on the importance of choosing local and seasonal produce for best results.Following a visit to the Farm Shop, Paul was given a tour around the grounds of the Hopetoun Estate by Lord Hopetoun who gave insight into the rich heritage of the Hopetoun kitchens dating back to the 1700's.

Lord Hopetoun said, “We were all thrilled that Paul Hollywood chose to visit Hopetoun as part of his new series. Exploring the seasonality of our game and other produce we also investigated the history of food at Hopetoun from the 1700s through to the present day. Food is a huge passion of the family, which is why we opened the Hopetoun Farm Shop, and I am very proud that it is the ingredients from the Hopetoun Estate which make up Paul's fantastic Raised Game Pie."

  • Paul Hollywood's Pies And Puds will be a 20-part cookery series with popular television baker Paul Hollywood starting from 4th November.
  • Each of the 45-minute shows will see Paul cook three mouth-watering recipes. He'll produce a signature pie and a signature pudding but in between, he'll create something a little bit different, inspired by a guest expert. Paul and his guest expert will cook the dish together, often showing off their unique technical skills such as sugar spinning or fondant icing.
  • The series will also see Paul scour the length and breadth of the UK, as he searches for traditional local recipes and delves into the stories and heritage behind them. The people he meets on his travels will also join Paul in the kitchen, to watch him bake their recipe and, of course, taste the results.
  • Paul Hollywood said: “This programme is about our affection for straightforward, honest food. Pies and puddings really sum up the strengths of our culinary culture - there's something about a home-baked pie or simple steamed pud that warms the cockles of your heart like nothing else. It's good food simply made and above all delicious."
