The Bite Club Rhubarb Fizz
35ml Blackwoods Scottish Gin
Juice 1/2 lemon
3 Stalks lemon thyme/lemon balm
1 Dessert spoon rhubarb puree (tinned is fine)
Quality ginger beer to top up
Sugar syrup to taste
Lemon balm is a great herb and packs a flavour punch unlike any other. Rhubarb puree is available all year but to really impress, use some real stuff too, it's about the only thing that survives this weather!
Method
Place lemon balm in tall glass and wipe inside of glass with it lemon to release oils etc, leave stalks in glass.
Add gin, lemon juice and rhubarb puree and mix thoroughly
Fill glass with crushed ice.
Top with ginger beer. Add sugar to taste.
Garnish with a sprig of lemon balm and a lemon wedge.
