Tom Yum Soup

Serves 2
Ingredients

8 medium sized king prawns shelled with tails left on, 2 cups of vegetable stock, 1/2 cup sliced carrots, 6 cherry tomatoes, 1 1/2 cups of button mushrooms - halved, 1 stem of lemongrass - cut into 2 inch pieces, 1 piece of galangal - thickly chopped, 5 fresh kaffir lime leaves, coriander root, 2 tbspns chopped coriander leaves, 2 tbspns light soya sauce,1/2 tspn salt, 1-2 green or red fresh chilles - crushed.

Method

1. Place the carrots and tomatoes in the vegetable stock with lemon grass, lime leaves, coriander root, galangal and bring to the boil.

2. Boil for 2 mins and then simmer.

3. Add mushrooms, soya sauce, salt and lime juice. Bring back to the boil.

4. Add the king prawns and bring back to the boil.

5. Place chopped coriander and chilli in a bowl.

6. Pour hot stock and its constituents over ingredients in the bowl.

Serve Immediately
