Ingredients
250 ml Tomatoes, 4 Tablespoons of olive Oil, 1 250g Red Pepper, 1 Red Onion, 1 Green Pepper, 2 Tablespoons White Wine Vinegar, 2 Cloves Garlic, 500ml Tomato Juice, 4 Basil Leaves
Method
1. Blitz all the ingredients in a food processor except the oil.
2. Once the vegetables are of a smooth consistency gradually add the oil.
3. Season with a little salt and pepper.
