MY FAVOURITE BARS HAVE ALWAYS FILLED A SOCIAL VOID JUST WAITING FOR THE RIGHT OCCUPANT. A GOOD BAR IS ALWAYS COMFORTABLE, WITH A SENSE OF COMING HOME. IF YOU'VE EVER PLAYED THE GAME "IF I OWNED A BAR I WOULD..." - WELL, IF I OWNED A BAR, I WOULD MAKE IT JUST LIKE ANNA AND MIKE CHRISTOPHERSON'S BARS...ALL THREE OF THEM.

Anna and Mike arrived in Edinburgh from Sweden a few years ago. In late 2004 they opened Boda Bar, transforming it from the rather tatty Lorne Bar to a chilled-out hideaway. A year later, they opened Sofi's (named after their firstborn child) on Henderson Street. A new year, a new baby on the way and a new bar as the closed Victoria Bar is given a new lease of life. Just a block up from Boda, you can find Victoria by the bright pink lampshades in the windows and slumpable window seats. Victoria attracts me for the big windows, big seating and a big drinks list in equal parts...

The imported beer list is worth checking out. Victoria is one of a handful of pubs in Edinburgh to offer the Russian Baltika on tap (£2.90 pint). It's a hefty beer, and one that locals have already taken to heart. Well, it is Leith Walk, and it sure beats Buckie. The list also features bottled beers from Bangladesh, Colombia, Cuba, Mongolia, Greece and Cyprus amongst others. Thankfully, and refreshingly, there's also a good selection of non-alcoholic drinks. However, I veered straight for the gin last time - with a selection of about 10, plus organic Fevertree tonic water (mmmm), who was I to argue? My favourite was the Tanqueray 10 (£3.40 for a 35ml nip); however Anna's fave, Junipero Organic (£3.40 and a not-to-be-sneezed-at 49.5%ABV) was also pretty tasty.

With uber-friendly staff, plans for food in January and an eclectic mix of DJs planned for whenever the soundproofing is complete, it's bound to become a Leith Walk institution.
