Stac Polly Launches Brasserie, Gin & Wine Bar ...

Established Edinburgh restaurant Stac Polly has undergone a major refurbishment on its Dublin Street ground floor, creating a new Scottish-style brasserie, gin and wine bar.  The original restaurant remains in the basement. 

The brasserie's modern-Scottish lunch menu is divided into sections for meat, fish, vegetarian and sharing platters. Post-lunch a menu of smaller dishes and snacks is available from mid-afternoon and throughout the evening.

Brunch will be offered on Sundays - designed to be enjoyed with the Sunday papers and a Bloody Mary.

A selection of Scottish and London gins are served simply allowing their unique botanical flavours to take centre stage.  Two signature cocktails have been developed - an Edinburgh Raspberry Gin Fizz served with seasonal home-made syrups, and a classic Gin Martini made with Noilly Prat and a lime twist.

The lunch menu focuses on seasonal, Scottish ingredients from local suppliers and includes: roasted wild pigeon breast with Stornoway black pudding, beetroot glaze and carrot slaw; poached mussels, white wine, cream, parsley and lemon; roasted aubergine tarte tatin with melted goats' cheese, winter leaves and tomato coulis; and a sharing plate of vodka-cured sea trout, beetroot and dill cured salmon, mackerel mousse, smoked salmon with salad leaves and tartare dressing.

The bespoke zinc-finished bar serves a carefully selected, limited range of premium gins, beers and wines.   Scottish gins including Caorunn, Edinburgh Gin, The Botanist, Hendricks and Blackwoods, as well as London gins Tanqueray Ten, Sipsmith, and Martin Miller reinforce this uncomplicated approach.  Blackwoods Scottish vodka is available for non-gin-lovers.

With differing flavours, the gins represent subtle variations in their botanical composition.  These flavours may be further enhanced by the addition garnishes including cucumber, ginger, nutmeg, raspberries, strawberries, oranges, lemons and limes and Fever Tree mixers.

With Farrow and Ball paint, rich oak flooring and butcher's block tables, the space retains a sense of Scottish heritage whilst skilfully conveying a feeling of modernity.  A huge photograph of the eponymous mountain Stac Polly takes pride of place next to an exposed stone wall; and humorous but apposite touches include antler statues in the windows and ox horns on the mantelpiece.  The bigger of the two dining spaces is enhanced by seven original ceiling roses, each displaying large light shades of varying colours of Bute tweed.

Stac Polly Dublin Street is open 7 days a week from 12pm until midnight. Lunch is served Monday to Saturday from 12-2pm.  Brunch is served from 12.30-3pm on Sundays.
